Delicious noodles paired with chicken and shrimp, it will sure be a crowd pleaser.
Ingredients:
1 pack of rice noodles (270g)
2 stalks of scallions
1 shallot chopped
2 tbsp of Tamarind concentrate
2 tbsp of brown sugar
1/2 tbsp of dark soy sauce
2 tbsp of fish sauce
1 tbsp of oyster sauce
2 pieces of chicken thigh (cut into bite sized pieces)
6 peeled shrimp
1 block of firm tofu
2 eggs
1 cup of bean sprouts
1 tbsp of crushed roasted peanuts
Instructions:
- Soak the rice noodle in room temperature while preparing chicken, sauce and vegetable.
- Make sauce with secret ingredient: tamarind concentrate, brown sugar, dark soy sauce, fish sauce and oyster sauce.
- Mix until sugar is dissolved
- Add in shrimp, 1-2 min
- In oiled wok, on medium high heat add chicken thigh, 3-4 min.
- Add in firm tofu, shallot, 1-2 min.
- Add in the noodle and pour in the sauce, 3-4 min.
- Push to the side. Crack 2 eggs, scramble the eggs.
- Turn heat to high, add in bean sprouts and scallions, saute for 30 seconds
- Add crushed peanuts, green onions and lime wedges.
