Ingredients: 

4 pieces of white loaf bread

4 pieces of thinly sliced Spam

4 large eggs

3 tbsp milk

1 tsp Butter

Japanese Kewpie Mayo to taste

Instructions:

  1. Cut Spam into 4 thin slices, cut the ends of the bread.
  2. Beat the eggs with milk.
  3. Spread Japanese Kewpie mayo on one piece of bread
  4. Pan fry Spam slices both sides until golden.
  5. Place slices of Spam on bread.
  6. Set a pan over medium heat and add butter. Add egg mixture. Gently fold the eggs. Cook eggs to desired doneness on medium heat.
  7. Plate eggs on the Spam.
  8. Cover with another piece of bread.
  9. Assemble sandwich in order: bread, spread Japanese Kewpie mayo on one piece of bread, 2 slices of spam, eggs. Cover with another piece of bread. Do the same for the second sandwich.
