Healthy Sea Cucumber Soup (海参汤)

Sea cucumbers are very low in calories and fat and high in protein. Try this healthy and delicious soup.

Ingredients

3 cups of chicken stock

6 dried sea cucumbers

4 scallions

1/2 inch of ginger, sliced in half

corn starch slurry (1/2 tbsp corn starch, 1/2 tbsp water)

1 tsp oyster sauce

1/2 tbsp soy sauce

1/4 tsp salt to taste

1/8 tsp of white pepper

1/8 tsp sesame oil

Optional: 1 tsp of goji berry

Instructions

  1. Soak 6 dried sea cucumber in water for 24 hours at room temperature, change water and continue soaking for another 24 hours
  2. Put in Instant Pot with 3 cups of water, pressure cook on low for 40 mins and natural release. Open lid carefully. Make sure the sea cucumber is fork tender.
  3. Cut each sea cucumbers in half.
  4. Boil sea cucumbers in 3 cups of chicken stock with ginger. Wait until it boils then  simmer for 10 mins with lid half closed.
  5. Add roughly chopped up scallions, simmer for another 10 mins with lid half closed.
  6. Add corn starch slurry, oyster sauce, soy sauce, salt, white pepper and sesame oil.
  7. Optional add goji berry.
  8. Take out slices of ginger.
  9. Serve on rice.
