Why I learned how to make Chinese crepe?

I grew up in China where each morning is greeted with breakfast street line ups to a variety of different foods, Chinese crepe being the most popular. Moving from China in the 90’s meant losing that part of food experience and thankfully, my parents quickly learned how to make the beloved Chinese crepe or Jian Bing at home. Although there are authentic Chinese breakfast restaurants in most major cities in North America now, I learned to make Chinese crepe to savor my childhood.

Ingredients:

Batter:

2 parts Moong Beans

1 part Millet

1 part Soybeans

1/2 tsp five spice powder

½ tsp salt

Sauce:

1 tbsp Sweet Bean Paste

1 tbsp Soybean Paste

1 tbsp water

Add spring onion and cilantro as needed

Instructions:

  1. Combine above batter ingredients and water, make a batter the consistency of heavy cream.
  2. Pour the batter into a frying pan to form a crepe.
  3. Crack an egg on top of the crepe then spread. Add spring onion and cilantro.
  4. Flip over when the crepe firms up. Brush with sauce. Add dough fritters.
  5. Fold the crepe around the fritters and enjoy!
