Baked Feta Pasta

No wonder Finland sold out of feta cheese at one point because of this virtual recipe. I, now, make this recipe on a weekly basis. It is that good! Inspired by @feelgoodfoodie

Ingredients:

  • 7 ounces dried fusilli pasta or paste of your choice
  • 1 shallot, diced
  • 2 pints grape tomatoes
  • 6 ounces block feta cheese
  • 1/2 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp lemon pepper or black pepper
  • 2 garlic cloves, minced
  • 1/3 cup chopped fresh basil

Instructions: 

  1. Preheat oven to 400°F. Place grape tomatoes in oven-safe baking dish. Add olive oil, salt and lemon pepper.
  2. Place feta block in the middle of the baking dish, add more olive oil on top of the feta. Add minced garlic and diced shallot, mix everything well.
  3. Bake in the middle rack of the oven for 35 minutes, until the grape tomatoes burst and the feta cheese melts.
  4. Cook pasta according to package instructions.
  5. Add fresh basil and mix well. Then add cooked pasta and mix again. Enjoy!
