No wonder Finland sold out of feta cheese at one point because of this virtual recipe. I, now, make this recipe on a weekly basis. It is that good! Inspired by @feelgoodfoodie
Ingredients:
- 7 ounces dried fusilli pasta or paste of your choice
- 1 shallot, diced
- 2 pints grape tomatoes
- 6 ounces block feta cheese
- 1/2 cup olive oil
- 1/4 tsp salt
- 1/4 tsp lemon pepper or black pepper
- 2 garlic cloves, minced
- 1/3 cup chopped fresh basil
Instructions:
- Preheat oven to 400°F. Place grape tomatoes in oven-safe baking dish. Add olive oil, salt and lemon pepper.
- Place feta block in the middle of the baking dish, add more olive oil on top of the feta. Add minced garlic and diced shallot, mix everything well.
- Bake in the middle rack of the oven for 35 minutes, until the grape tomatoes burst and the feta cheese melts.
- Cook pasta according to package instructions.
- Add fresh basil and mix well. Then add cooked pasta and mix again. Enjoy!
