Chicken drumsticks coated in delicious and crispy coating, cooked in an air fryer. This recipe is easy to learn and you will have tasty fried chicken in 30 min (marinate overnight).
Ingredients:
- 5 chicken drumsticks
Chicken Marinade:
- 1/4 tsp black pepper
- 2 tsp light soy sauce
- 1 tsp garlic powder
- 1/2 tsp salt
Dry Batter:
- 3/4 cup of cornstarch
- 3/4 cup all purpose flour
- 1/2 tsp onion powder
- 1 tsp garlic powder
- 2 tsp curry powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp baking powder
Other:
- 1/2 cup water
- 2 eggs (beaten)
- 2-4 tbsp vegetable oil or as needed
Instructions:
- Pro-tip: poke chicken drumsticks with a fork, so the marinade can be better absorbed.
- Combine marinade with chicken drumsticks in a large Ziploc bag. Marinate chicken with black pepper, light soy sauce, garlic powder and salt. Mix well.
- Pro-tip: remove as much air as possible in the Ziploc bag and seal it. Rest in the fridge for 3 hours or overnight.
- Combine all ingredients (cornstarch, all purpose flour, onion powder, garlic powder, curry powder, salt, black pepper and baking powder) to create dry batter, whisk well.
- Take 1 cup of the dry batter and add to another bowl and this is the dry batter
- To the remaining dry batter (the bowl with the less batter), add water and secret ingredient: beaten eggs to create the wet batter, whisk well
- Coat chicken in dry batter, wet batter and dry batter again.
- Spray with vegetable oil, add chicken drumsticks. Spray again with vegetable oil.
- Placed them in a single layer, air fry at 375°F/190°C for 11-12 min, flip, 375°F/190°C for another 11-12 min.
