BEST Curry Beef Udon! Chewy udon served with delicious and rich curry gravy along with beef, it is a must-try!
Ingredients:
- 2 servings (total 400g) of udon noodles
- 200g hotpot or shabu-shabu beef, thinly sliced
- 1 tsp light soy sauce
- 1 tsp grated ginger
- 1 tbsp cooking oil
- Bok choy, blanched
Curry:
- 1/2 onion sliced
- 2 cups of water or dashi stock
- 2 cubes of Japanese curry
- 1 tsp of light soy sauce
Directions:
- Combine hotpot or shabu-shabu beef with light soy sauce and ginger, mix well and set aside
- In a heated oiled wok, add beef and cook until browned, set aside
- Add oil, stir fry onion until soften.
- Pour in water or dashi stock, and curry cubes. Important: you don’t want eat a chunk of undissolved curry cube, dissolve curry cubes fully. Add light soy sauce. Allow the curry to simmer until it thickens like gravy.
- Cook Udon noodles according to package instructions.
- To serve, place cooked Udon first, then cover with curry, add beef, and garnish with vegetables.
