This is the BEST Spam Fried Rice. It’s delicious and easy and full of nutritious vegetables.
Ingredients:
- 1 and 1/2 cups of uncooked white rice cooked the night before and refrigerated
- 1 can of spam (340g and diced into cubes)
- egg mixture: 2 beaten eggs with 1/8 tsp of salt
- 1 bell pepper (diced into small pieces, I chose red for aesthetic reasons)
- 1/4 cup of frozen green peas
- 1/4 cup of corn
- 2 stalks of scallions (chopped)
- 1 tsp of fish sauce
- 1/2 tsp light soy sauce
- 1 red onion (diced)
- 1 tbsp sesame oil
- 1 tbsp vegetable oil in total
- 1 tbsp of butter
Instructions:
- Add salt to eggs, beat the egg mixture and set aside
- In oiled wok, add spam, once they are golden brown. Set aside.
- Add beaten eggs, scramble, fry until cooked.
- Add day old rice, mix together with the scrambled eggs, push to the side.
- Add oil if needed. Add bell pepper, corn, green peas, scallions, and onion, mix together, fry until softened. Cook for 2-3 min.
- Add the spam back.
- Add light soy sauce and secret ingredients: fish sauce and butter, mix well.
- Pro-tip: add toasted (dark in color) sesame oil at the end as a finishing oil so the flavor stays fragrant. Toasted sesame oil is used in Asian cooking as a seasoning rather than a cooking oil. In most recipes, it’s typically added in the last stage of cooking or used in marinades, dressings, and sauces.
