Wonton Noodle Soup (云吞面)

Nothing beats making wontons with your family on a rainy day. You can make a whole batch of this scrumptious treat, eat them right away in a bowl of hot soup. 

Ingredients:

  • 220 g wonton wrappers (approximately 50 wrappers)
  • 4 stalks of Chinese vegetables
  • 174g egg noodles

Wonton Filling: 

  • 200g ground pork
  • 200 g peeled and deveined shrimp
  • 1 tbsp minced ginger
  • 1 stalk of scallion (pro-tip: thinly sliced the scallion so it’s easy to wrap the filling into the wonton wrapper)
  • 2 tbsp light soy sauce
  • 2 tbsp Chinese cooking wine
  • 1/2 tsp salt
  • 1 tbsp sesame oil, toasted
  • 1/8 tsp white pepper
  • 1/2 tsp Chicken bullion powder
  • 1/4 tsp sugar

Broth (for 2 servings):

  • 3 cups of chicken broth
  • 2 slices of ginger
  • 1 tbsp light soy sauce
  • 2 tsp sugar
  • 1 tbsp Chinese cooking wine
  • 1/4 tsp sesame oil

Instructions: 

  1. Finely chop peeled and deveined shrimp into a fine paste.
  2. Then add to a large mixing bowl with your ground pork, then add minced ginger, thinly sliced scallions, light soy sauce, Chinese cooking wine, salt, sesame oil, white pepper, chicken bullion powder and sugar
  3. Combine ingredients. Pro-tip: use a pair of chopsticks mix in one direction until it forms a sticky paste.
  4. To make your wonton, place a teaspoon of filling in the center of your wrapper. Wet all sides of your wrapper with water, then fold over into a triangle and seal, squeezing out any air pockets. Hold for 5 seconds. Then wet the two long corners of your wonton and connect them together. Hold for 5 seconds. Pro-tip holding for 5 seconds ensures the wonton wrapper stays intact.
  5. Bring water to boil. Lower wontons and boil for 2-3 minutes or until they float. Stir occasionally to prevent sticking.
  6. Boil egg noodles according to package instructions.
  7. Place broth ingredients (chicken broth, ginger, light soy sauce, sugar, Chinese cooking wine and sesame oil) in a saucepan over high heat. Place lid on, bring to a simmer then reduce to medium high and simmer for 5-6 min. to allow the flavors to infuse. Pick out slices of ginger. Blanch vegetables in the soup broth.
  8. Add noodles, wontons, and vegetables to broth. Enjoy!
