You won’t want to miss this scrumptious dish with shrimp, veggies and so much more, full of flavors. I experimented with the sauce many times and finally come up with the PERFECT sauce that is packed with umami.
Ingredients:
- 1 and 1/2 cups of uncooked white rice cooked the night before and refrigerated
- 200g of deveined and peeled shrimp
- 2 garlic cloves, minced
- 1 red onion, diced
- 1 cup of carrot, diced
- 4 eggs, beaten
- 1 cup frozen green peas
- 1/2 frozen corn
- 2 stalks of scallions (chopped)
- 1 tbsp sesame oil
- 2 tbsp oil in total
Secret Curry Sauce:
- 1/8 white pepper
- 1.5 tbsp curry powder
- 3 tbsp water
- 1/2 tsp salt
- 3 tbsp light soy sauce
Instructions:
- Make my secret curry sauce with white pepper, curry powder, water, salt and light soy sauce. Mix together.
- In oiled wok, add shrimp, cook until they change color. Set aside.
- In oiled wok, add minced garlic, cook until fragrant.
- Add beaten eggs, scramble, fry until cooked.
- Add day old rice, mix together with the scrambled eggs, push to the side.
- Add oil if needed. Add corn, carrot, onion and green peas, mix together, fry until softened. Add cooked shrimp.
- Add secret curry sauce, mix well.
- Pro-tip: add toasted sesame oil (dark in color) at the end as a finishing oil so the flavor stays fragrant.
- Garnish with scallions, enjoy!
