Great recipe for a hot summer day, this healthy recipe is simple and fast. Umami flavor dipping sauce pairs great with nutty soba noodles.
Ingredients:
- 7 oz (two bundles) soba noodles
- 1 stalk of scallion
- 1-2 tbsp grated daikon
- 1/2 tbsp white sesame seeds
Sauce:
- 2 cups of dashi stock (you can use instant dashi mixed with water)
- 1/4 cup light soy sauce
- 1/2 cup mirin
- 1/4 tsp sugar
Instructions:
- For the dipping sauce, add dashi stock, light soy sauce, mirin and sugar to a saucepan.
- Over medium heat, bring the sauce to a gentle boil. Remove from heat and allow to cool.
- Cut up scallions and grate daikon.
- Cook your favorite soba noodles, place soba noodles in ice water.
- Add ice to the dipping sauce to keep the dish cool longer. Then add scallions and white sesame seeds to the dipping sauce.
- Add grated daikon to noodles.
- Dip your noodles to the dipping sauce and enjoy!
