One of my favorite dish is this refreshing and delicious smashed cucumber salad. It’s easy and great for hot days.
Ingredients:
- 2 English seedless cucumbers
- 1 tbsp sesame paste
- 1 tsp salt
- 2 tsp sugar
- 2 tsp sesame oil
- 3 tsp light soy sauce
- 2 tbsp Chinese black vinegar
- 2 cloves garlic (minced)
- 2 tsp sesame seeds
- Optional 1-2 tsp chili oil
Instructions:
- Slice the ends off the cucumbers.
- With the side of the knife, smash cucumbers a few times. The cucumber should be cracked open and smashed into sections.
- Slice cucumbers diagonally.
- Add sesame paste, salt, sugar, sesame oil, light soy sauce, Chinese black vinegar, minced garlic, sesame seeds and chili oil (optional)
- Mix well and enjoy.
