Sea cucumbers are very low in calories and fat and high in protein. Try this healthy and delicious soup.
Ingredients
3 cups of chicken stock
6 dried sea cucumbers
4 scallions
1/2 inch of ginger, sliced in half
corn starch slurry (1/2 tbsp corn starch, 1/2 tbsp water)
1 tsp oyster sauce
1/2 tbsp soy sauce
1/4 tsp salt to taste
1/8 tsp of white pepper
1/8 tsp sesame oil
Optional: 1 tsp of goji berry
Instructions
- Soak 6 dried sea cucumber in water for 24 hours at room temperature, change water and continue soaking for another 24 hours
- Put in Instant Pot with 3 cups of water, pressure cook on low for 40 mins and natural release. Open lid carefully. Make sure the sea cucumber is fork tender.
- Cut each sea cucumbers in half.
- Boil sea cucumbers in 3 cups of chicken stock with ginger. Wait until it boils then simmer for 10 mins with lid half closed.
- Add roughly chopped up scallions, simmer for another 10 mins with lid half closed.
- Add corn starch slurry, oyster sauce, soy sauce, salt, white pepper and sesame oil.
- Optional add goji berry.
- Take out slices of ginger.
- Serve on rice.
