Ingredients:
670 g pork belly
6 medium sized potatoes
½ tbsp of salt
6 garlic cloves
4 slices of ginger
2 scallions
2 tbsps Chinese cooking wine
2 tbsps light soy sauce
1 tbsp dark soy sauce
Spices:
½ tbsp Sichuan peppercorns
1 dried cardamom
1 cinnamon stick
2 bay leaves
4 star anises
20g rock sugar
4 dried red chilies
Instructions:
1. Cut pork belly into bite size chunks
2. Put ginger and pork belly into boiling water, boil for 2 minutes
3. Drain the meat in a colander then rinse meat under water
4. On medium heat, add oil, scallion, ginger and spices, cook until fragrant
5. Add meat, salt, Chinese cooking wine, light and dark soy sauce
6. Add boiling water until it covers the pork belly
7. Optional: add garlic
8. Bring the pot to a boil and simmer on low for 1 hr 40 mins to 2 hours, stir the meat around a few times so the meat is not sticking to the pot, add boiling water as needed.
9. Add bite sized potatoes, cook until potatoes and meat are fork-tender
