Ready in 30 min. Delicious and healthy. This tender chicken Chow Mein is full of flavors and packed with nutritious vegetables.
Ingredients:
- 425 g steamed Cantonese chow mein noodles
- 1 lb skinless boneless chicken thighs
- 2 cups bean sprouts
- 2 cups flat cabbage (thinly sliced)
- 2 cups celery thinly sliced at an angle
- 1 cup carrot sliced into matchsticks
- 2 stalks scallions chopped into 1-inch pieces
Chicken Marinade:
- 2 tsp light soy sauce
- 1 tsp cornstarch
- 1 tsp chicken bullion powder
- 2 tsp water
Sauce:
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 3 tbsp oyster sauce
- 2 tbsp Chinese cooking wine
- 2 tsp sesame oil
- 1 tsp white sugar
- 1/8 tsp white pepper
- 2 tsp cornstarch
- 2 cloves garlic (minced)
Instructions:
- Cut chicken thighs into bite size pieces.
- Marinate chicken with light soy sauce, cornstarch, chicken bullion powder and water, mix together, set aside for 20 min.
- Make sauce with light soy sauce, dark soy sauce, oyster sauce, Chinese cooking wine, sesame oil, sugar, white pepper, corn starch and minced garlic. Mix together.
- Pro-tip, buy steamed chow mein to save time. Dip chow mein noodles in boiling water for 30-60 secs. Unsteamed noodles need to be steamed first then boiled according to package instruction.
- In oiled wok on medium high heat, add chicken. Fry until cooked.
- Push to the side, add celery, carrots and cabbage. Fry until softened.
- Add cooked noodles and pour in sauce.
- Add bean sprouts and scallions. Mix until everything is well coated.
